THE BOTTOM
5 dl/ nuts (I used almonds, hasel, cashew & para)
Dried apricots (I used 10-12, dates will work just fine aswell)
Cardamom 1 vanilla bean
Taste it of with little agave syrup or honey if you like it sweeter.
How to: Mix the nuts, add all the other ingredients (it's possible to eat the entire vanilla bean and not just its contents). When you feel happy about the texture and sweetness of your bottom, press it out on a plate covered in plastic wrap.
 
THE FILLING
1 dl cashew
2 avocados
4 dl raspberries
How to: Mix the nuts, then add remaining ingredients and mix until smooth. Pour on your nut bottom and store in the fridge. This mousse can be eaten just as it is, without the bottom, if you prefer that. Let your cake unfreeze atleast 1 hour before you serve it, enjoy with lots of berries!
